Spinach Omelet in Pita with Polenta

scrambled egg with spinach

Fresh spinach torn into some sliced white mushrooms, wilted and covered with beaten egg. Some served straight, some pitaed into whole wheat and fresh spinach. Other half of pita broiled with mashed polenta and old cheddar to brown. Bit of rye bread and salsa on the side.
