
The dip and veggies (orange, purple and white cauliflower, red pepper, carrots, broccoli) and corn chips are for warm up.
This is accompanied by tomatillo salsa verde boosted with a bit of sweet bell pepper chopped in. Beside the salsa is an equally steaming pearl barley. The barley is nested in other veggies and lobster mushrooms, with a little butter and veggie bouillon to boost the flavor.

I know I am kind of a nerd for saying this…but I LOVE the colors here…for these dishes!
I agree…the colors are beautiful! I’ve never cooked pearl barley before but I did buy some recently and it’s sitting in my pantry. I think I’ll be experimenting with it this weekend…thanks for the inspiration
