
This started with a blueberry pancake pre-mix but not being one to leave well-enough alone, I added 1/6 cup hemp seed and 1/6 cup quinoa flour to the 2/3 cup of mix, plus a bowl of blackberries for good measure. Also I used water instead of milk, a whole egg instead of what would have amounted to half an egg in the scaled down recipe, and fried on butter instead of oil. It turned out well. It’s hard to mess up pancakes.
