Tomatillo Sauce Over Rice

A quite delicious cashew-tomatillo sauce over basmati rice with biryani spice. (Tomatillos are “husk tomatoes” with an almost citrus-flavor.)
The recipe is from Vegetarian in Paradise, with a substitution of skim milk for unsweetened soy milk. The option of a garnish of paprika and grated carrots was taken.

Focaccia, folks

Some deep focaccia bread topped with parmesan, romano, zucchini, mushrooms, bell peppers and low-fat (17% MF) feta. Green beans lightly cooked add a different texture.

Taco Care Now

Tacos, our traditional anniversary food on the eve of our 179th anniversary.

Ground Soy Good and the low-salt taco spicing, cheese, tomatoes, romaine lettuce, salsa, hot peppers. (The red peppers when they start to wrinkle are hot!)

Fruit salad

Looking forward to making the fruit salad again. The pink grapefruit, clementines, macintosh apples, banana and yellow plums drizzled with honey worked well.

The gnocchi with 2-colored sauce, cooked pureed tomatoes with a little cream cheese and tvp-blognese tomato sauce was quick and didn’t use much heat in this hot day.

Cool is the Key

34 degrees in. 36 degrees out. (94 and 97 Fahrenheit). A refrigerator-temperature meal is best, and served with lemonade.
Prep: In the cool of yesterday evening, cooked eggs and asparagus, and roasted red peppers. Made devilled eggs to chill and left asparagus to marinade in dressing this morning.
