Chilled Soup and Lentil Curry

Some parts of this worked. The cold soup made from tomatoes, cucumber, dill, parsley, roasted red peppers, green and yellow onion on hand, blended in a food processer worked wonderfully. So did the brussels sprouts.

The curry-rice was texturally not stellar and I went a little overboard on the hot peppers. However it was 14g dried lobster mushroom re-hydrated (would have needed more to balance out the other strong flavors), 3/4 cup red lentils, 1 cup of ebony and mahogany rice (half that would have been enough), 3 tiny red peppers (a third of that later in the hot-ripe season), vegetable bouillon and 2 Glico curry sections. (See pic. It says: “contains no animal products”.)
