Edame Dip

The dip looked and tasted good in the end. It’s easy to overpower edame beans. Some mayonaises could do it or if your green onions are particularly potent. One could put hot red peppers too.

200 grams (1/2 pound) shelled edame (green soy beans)
scoop mayo
1 red pepper chopped
rice vinager
2 green onions
1/2 lime juice and zest
drizzle of olive oil
2 cubes parsley
1 cube dill
several stems of fresh cilantro

All whirled in the food processer.

Tomatoes and various crackers made a nice meal with a bit of thawed baked beans of a past post and those egg shaped dumplings in the background merited a post of their own.
