Upsidedown Apple Pie

This is an experiment that worked.


6 peeled apples (Washington and Granny Smith in this case), sprinkled with a little brown sugar and a nob of butter.


A “crust” like a dumpling, sort of, to cover the top.
It was made from
1 1/2 cups white flour
1/2 cup oatmeal
2 teaspoons baking powder
3 teaspoons cold butter
3/4 to 1 cup of milk

Dry mixes as for tea biscuits with butter chopped in with a pastry knife. Milk added all at once to make a ball. Rolled out thin and crumpled for a crust.

Over this a sauce
1 cup of honey
1 1/2 cup water
3 tablespoons butter
1 1/2 tablespoons cinnamon
vanilla extra splashed
1 tablespoon of flour.

This lot heated up and poured over the crust, letting it go over in the ridges and run beneath to the apples.

Bake for 35 minutes at 350.

The pastry puffed quite a lot. I might try it next time with a little less crust or a couple more apples.
