Whipped Potato Sandwich

When I was little, I made sandwiches out of everything. This is a update comfort food that reaches the same pleasure of textures.

Whole wheat toast scratchy-crispy, hot milk-whipped mashed potatoes with hot-pepper havarti cubes shoved in to melt in the heat. Its softness is piled on cold slices of tomato drizzled in rosemary infused olive oil.

    I just love mashed potatoes, Pearl, but even so I doubt I’d want a sandwich made with them. You sure make it sound inviting though.
