Minestrone Soup

Why don’t I cook this more often? It only takes a little over a half hour.

A dry mix of minestrone pasta was supplemented with chopped veggies.

Carrots, squash, onions, zucchini, celery, and brown lentils out of scene.

    I’m a little behind on reading this site, but I’ve been thinking about making some minestrone myself. I’m on a soup kick and for once I’m using recipes.

    I love how there are a billion versions of minestrone, so each time you make minestrone, it’s different than the last time.
