Apple-Winter Squash Bisque

A lovely bit of warm soup. It’s based around a packet of A taste of Thai Tom Ka Soup Mix flavoring (with galanga ginger, lemon grass, green chili, coriander root, onion powder, coriander seed, kaffir lime peel and leaves).

1 lb of squash (1/2 a long one, peeled and chopped)
1/4 large onion
3 cups veggie bouillon stock

The onion and yellow squash should be boiled then simmered for 20 minutes.


1 packet of spice
2 large apples
1 large precooked potato
1/2 cup of milk
1 Tbs coconut cream

Add these and simmer 10 minutes and then puree in the food processor.

On the side thyme and mushrooms cooked with cous cous.
