Spag-uessed it

Parmigiano-Reggiano standing up and lagging about over the bed of rustichella d’abruzzo wholemeal durum wheat spaghetti.

Smashed Red Pototoes

Baked red potatoes, smashed with the peel for color beside some eggplant and zucchini briefly boiled and topped with an Indonesian peanut curry.

Spinach Pancakes

A savory pancake with parmigiano-Reggiano, finely mincely spinach and broccoli. Beside it red cabbage cooked with fennel and anise and thirdly, red kidney beans in a sauce with thyme, lemon juice, candied lemon, plum sauce and a few taps of rajmah masala blend.

Medium Dark Fruitcake

This is modified from a recipe called “Gram’s Christmas cake” collected by Carol Ferguson in Grandma’s Cookbook: Favorite Family Recipes. I believe it was from a supplement in Harrowsmith in the late 80s. I expect it’s the same Carol Ferguson who authored the The New Canadian Basics Cookbook a few years ago.
