Black Bean Sauce

I don’t mean black bean sauce as in the salty fermented concoction but something between a stew and a sauce.
The beans were a mix of

1/2 an onion (this one was pretty weak in taste, a 1/4 onion if piquant would be the equivalent)
1 can of black beans
1/2 can of sloppy joe pre-spiced tomato sauce
1 grated potato
anise to taste
cardamom to taste
cumin to taste

Microwaved until the potato is cooked.

Beside the beans is some of that pearl cous cous, some boiled brocoli and a cheese sauce that saw far too long in the microwave and became cheese crisps instead.


It was rather spectacular tho’ — cheesy stalactites and the rim of the bowl a dried taut skin, beneath a black-brown fused mound. The cheese crisps were the drumskin of the bowl. lol. Who says cooking isn’t fun?

    It looks quite nice and indeed cooking is fun as well as messy! lol!
