Piquant Pea Dip

Posted on Saturday 17 March 2007

This pea dip needs a snazzier name. Suggestions?

The recipe for the dip is

2 cups of frozen peas thawed
1/4 onion
2 cloves of garlic
2 squares of cilantro (frozen Toppits)
1/4 of a 250g box of Velveeta
1/4 cup Hellman’s mayonnaise
2 roasted red peppers
8-10 dashes of Tabasco sauce
1/4 cup of Gloria vegetable spread*
1 tbs lemon juice

Gloria vegetable spread may be hard to source, an import from Slovenia from the Italian grocery store. It is a puree of sweet peppers, eggplant, hot peppers, oil, sugar, salt and spice with a bit of hot pepper burn to it.)

Take all ingredients and puree in food processor until smooth. You may want to play with proportions since it’s always tricky to blend red and green ingredients and end up with an appetizing color. I think this color’s ok. Spicy bite and hardly any fat.
