Spinached Potatoes

Small serving for light appetite, some thawed garlic bread and some potato tosses in spinach and sauce.

recipe:

a few red potatoes, washed and quartered and baked

big handful of spinach leaves, torn to bite sized

sauce:
1/4 onion, chopped
1/2 cup tomato sauce
1.2 tsp each fennel, cumin, turmeric, red pepper, powdered ginger, cinnamon and hot pepper seeds
2 Tbp peanut butter
1/4 cup mashed chickpeas

Mix, microwave with a little water to make a medium thick consistency. (How much depends on the wateriness of the tomato sauce)

When potatoes are done, toss them and the heated sauce together until the spinach wilts.
