Cream of Plantain Soup and 2 Variations on Corn

Posted on Saturday 19 May 2007

Polenta topped with a puree of bean and raw mushroom, bruscetta sauce, basil and old cheddar broiled is one variation on corn. The other is cobs boiled, no salt, no butter, only original flavor.

I used this cream of plantain soup recipe but made it vegan by substituting HarvestSun herbal bouillion cubes (with lovage and chevril among the more typical herbal greens) for the chicken stock and used Belsoy, this sort of non-dairy cream for the tofu set:

it could have been thinner as a soup goes but it could hardly have been better in flavor and texture.
