Applesauce Cake

Posted on Saturday 9 June 2007

Applesauce cake

1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp allspice
salt (dash)

1/2 cup cultured unsalted butter
3/4 cup demera brown sugar
1 egg
1 cup applesauce
1 cup raisins

demera butter

1. Mix dry ingredients.
2. Cream the butter and brown sugar and mix under fluffy.
3. Add egg and beat well.
4. Alternately add the dry ingredients with the applesauce.
5. Fold in raisins.
6. Bake in a 9×9 pan lined with parchment paper at 350 degrees for 40-50 minutes. Cool 10 minutes before removing from pan.

It’s light and fluffy but still could use more spice, less butter and less sugar for my tastes.

This sounds great! I love spice cake so I would probably add more spices…especially since you mentioned that you would like more spice in it. I have some homemade applesauce to use up so maybe I’ll try this tomorrow! Thanks for the recipe :-)

I’m not a cake person, but I drool over applesauce and spice cake. I try to get my fix with spiced cider since making applesauce cake is time consuming but maybe I’ll actually bake for once (it happens once in a blue moon).
