A recipe is more a springboard than a mandate to my mind. In this case I started with Poco-Coco’s Butterscotch Bars
Mint Chip Bars
1/4 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter, cultured, unsalted, softened
2 large eggs
1 teaspoon vanilla extract
1 1/4 cups whole wheat flour
1/2 cup oatmeal
1/4 cup ground almond
1/2 teaspoon baking powder
3/4 cup chocolate mint chips (reserve 1/4 cup of it for top)
Preheat oven to 350. Grease with butter, or parchment paper, an 8″ square pan.
Use a mixture to cream the butter and sugars, add in eggs, beat. Mix the dry ingredients. Beat in. Stir in some chips. Spread in pan, sprinkle rest of chips on top. Bake for 25 minutes.
