Fusilli

Rainbow fusilli with paneer cheese, pickled red peppers and pesto. Fresh yellow beans, still squeaky complete it.

Banana Bread

A bit of improv cooking. All amounts are estimates.
cream:
1/3 cup cream cheese
1/2 c sugar
add:
3 small bananas (this is exact)
1 egg
1/4 cup almond milk
big splash vanilla
small splash almond extract
stir dry:
2 cups whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt

Chocolate Brownie

This recipe for Chocolate Cream Cheese Brownies is super-rich. I omitted the nuts and increased the cocoa by 1/3. I halved the frosting and substituted about the volume of milk with corn syrup, and upped the cocoa to get the right consistency.

How gratifying to empty so many containers.

Rich Tomato Sauce

Baked red potatoes with grated mozzarella, mushrooms over whole wheat pasta filled with olives and pesto. The sauce has the veggies with cauliflower, carrot, zucchini and soy pasta hamburger-substitute. The spice was garam masala, american saffron, cardamom, cumin, red pepper flakes and basil.

Tacos

The tacos are still tasty with so soya instead of hamburger. The black bean salad has some onion, celery and vinaigrette.

Which Sandwich?

The marbled pumpernickel and rye bread gets topped with tomato, cheese and cucumber while the peach sits in waiting.

Spinach and Soup

Egg drop sour soup, veggie-potato patties with carmelized onion on top (recipe mentioned lately) and some Indian-spiced chopped spinach.
The spinach was cooked with minced ginger, pinch each of salt, garam masala, cardamom, hot red pepper, wee bit of butter, dash of curry and a splash of almond milk.
