Israeli couscous

Israeli couscous salad with pita pockets. I’ve found it hard to source the big pearl couscous but natural food pantry stocks it now. Here it is cooked and tossed with rice vinegar, olive oil, red onion, zucchini and pine nuts. The mini pitas are stuffed with various sprouts and seaweed, tomato and hot chili cheddar sauce.
