Red Rice

Red rice is fast to cook, and kind of chewy with more flavor than some rices. Its topped with a carrot curry sauce. Alongside are boiled baby carrots, and in the back there (should have covered it to bake to prevent wrinkles) mushroom caps stuffed with whole wheat bread, the chopped stem of mushrooms, olive oil, oregano and onion.
