Perogies with Carmelized Herb Onion

Onion-cheese perogies, boiled and garnished with fresh chives and onion treated as below.

It turned out well, this salsa and yogurt that had gone off in the fridge. It forced me to look around. Used up the rest of the mushrooms, half a Vidalia onion in butter until softened. Plucked some thyme, carmelized them with onions with golden sugar and balsamic vinegar. Half a jar of frozen Devon cream to make a sauce.
