Tea Biscuits at Mom’s

Nutty Muffin-Cakes

A cupcake version of an Indian carrot cake
2 cups whole wheat flour
1/2 cup grated carrots
1/2 cup grated parsnip
1/4 cup chopped walnuts
3/4 cup sliced almonds
1/2 cup dry unsweetened coconut flakes
