Sundried tomato pesto zucchini eggplant spinach pizza

Yes, it’s guest blogger Brian here again.

Today, it’s a lacto-vegetarian pizza. I topped my homemade 50% whole wheat yeast-leavened thin crust with:

- Red pesto sauce
- Sundried tomato
- Slices of zucchini
- Slices of Italian eggplant
- Chopped fresh spinach
- Sprinkled with crumbled soft unripened goat cheese

    It’s super-easy to make, and you can easily substitute different ingredients based on what you have / feel like.

    That pizza looks insanely good.

    Thinking of replicating, but “baking” the pizza on an outdoor grill!
