Couscous with vegetables

Hello again blogosphere. It’s Brian here, with the final entry of my guest-blogging stint on Eaten Up.

Today it’s couscous topped with zucchini, Italian eggplant, sundried tomato pesto and fresh thyme, for a trans-mediterranean taste sensation. Very easy to make - 2 parts water to 1 part couscous, chopped vegetables pre-cooked in the microwave, then under the broiler for a few minutes.
