
A squash apple soup with carrots and other autumn goodness.

Mashing up this sweet potato soup, this butternut and apple soup and the slow cooker advice of this one
1/2 acorn squash
3 carrots
1 red sweet potato (which was red outside and white inside, or else was another root mislabelled)
1 small onion
2 cloves garlic
1 tsp fresh ginger
1 granny smith apple
1/2 veggie bouillon cube
dollop of pumpkin seed butter
dollop of medium salsa
sprinkle nutmeg, paprika, cinnamon
water
Crock pot.
The salsa intensified massively somehow in the slow cooking. First taste is sweet, second wave is vegetably-spice then tingle palate spice and aftertaste is throat hot pepper burn. It’s kind of Thai-heat. Could make some guacamole or might have to cook some potatoes to amend the burn downward.
