
Taking a cue from Kathy Smart’s veggie smoothie with beet, carrot, ginger, apple and orange, I found the beet beat all. I used too large of beet or other people like beet better? I tried adding more dried ginger, adding up to about 2 teaspoons, which overdid the heat but still tasted like beet. Pureed some more.
I tried diluting with a cup of rice milk. No go. Another 2 oranges added in. A tablespoon of lingonberry jam. 2 teaspoons of maraschino cherry syrup. Still tastes like pure beet with an afterburn of ginger.

Added half a cup of the strawberry basil salsa with hot peppers. Now we’re onto something.

Undeterred. Another orange, another cup of rice milk, a hot pepper and some strawberries.

Palatable. But also an awful lot to drink. Maybe I’ll see how it goes down. And only 1 beet out of the 10 lbs of red beets down.
It has so much ginger and hot pepper that it burns like vodka but looks and tastes like beets. A Russian dream? If it still seems like a big amount to drink, maybe I’ll reduce it down to a beet chutney.

Makes a very delicious smoothie. If my beet is a bit big – I add extra cocoa powder. I don’t have a super blender and I find the beet mixes in well.
Avocado, bok choy and chocolate. I hadn’t thought to use that combo.
